Zucchini Cookies

You can get your kids to eat Zucchini, in a cookie!

Makes: 5 dozen Time: 1 hour Taste: unbelievable


1 Cup butter, at room temperature, plus more for the pan

1 1/2 cups of sugar

2 large eggs

1 tsp. Vanilla extract

2 cups grated zucchini

2 3/4 cups flour

2 tsp. Baking powder

1 tsp. Each cinnamon and salt

1 Cup each chopped walnuts, semisweet chocolate chips, and sweetened coconut flakes.

1/2 cup raisins

1. Preheat oven to 350. Butter a large baking sheet.

2. Cream together butter and sugar in a large bowl until light and fluffy. Beat in eggs and vanilla. Stir in zucchini.

3. Whisk flour in a medium bowl with baking powder, cinnamon, and salt. Add to zucchini mixture. Stir in walnuts, chocolate chips, coconut and raisins.

4. Drop cookie dough by tablespoons onto prepared baking sheet. Bake until lightly browned, 15-20 minutes, then transfer to a cooling rack. Repeat with remaining dough.
