Five Ingredient/Low Calorie Ham & Tomato Omelette 


Five ingredients Low Calorie Recipe! Yes you can have ham and enjoy it in moderation this recipe calls for only 5 ingredients mostly fresh herbs, all from my indoor garden. The best part it’s only 278 calories that’s a win win if you ask me, no compromise on flavor and it’s healthy for you. 

Serves: 4

Ingredients: 

1. 4 shallots, thinly sliced 

2. 8 eggs, lightly beaten 

3. 2 tbs. finely chopped fresh mixed herbs, chives, chervil, parsley, basil and thyme

4. 7 oz. yellow and red cherry tomatoes, halved

5. 5 oz. water-thin smoked ham slices

Pantry: 1/4 cup extra virgin olive oil, salt and pepper to taste. 

•Heat 1 tsp. Of the oil in a medium skillet over medium-low heat, add the shallots and cook gently for 4-5 minutes or until softened. 

•Meanwhile, beat together the eggs and herbs in a large bowl and season with salt and pepper. 

•Remove three-quarters of the shallots from the pan with a slotted spoon and set aside. Pour one quarter of the egg mixture into the pan, then sprinkle over one quarter of the cherry tomatoes and stir gently, using a heat resistant rubber spatula, until the egg is almost set. Sprinkle one quarter of the sliced ham evenly for another minute. 

•Fold the omelette in half, slide out of the pan onto a warm plate and serve immediately. Repeat with the remaining.
