Fast Curry Chicken 

Fast Curry Dinner anyone? This momma has been trying to cut time and calories to help everyone out. But most of all keep taste and make sure the whole family can enjoy even the little picky eaters! 

This recipe requires only 5 minutes for prep, 20-25 cooking and has 413 calories. Serves (4) 

You will use “FIVE” ingredients: 

1. 1/4 cup medium curry paste

2. 8 boneless, skinless chicken thighs, cut into thin strips

3. 1 (13) oz. can diced tomatoes 

4. 8 oz. broccoli, broken into small florets, stems peeled and slices

5. 3 1/2 fl oz coconut milk

Pantry items: 

3 tbs. olive oil, 1 onion finely chopped , salt and pepper to taste.

•Heat the oil in a deep nonstick saucepan over medium heat. Add the onion and cook for 3 minutes until soft and translucent. Add curry paste and cook. Stirring for 1 minute until fragrant.

 •Add the chicken, tomatoes and coconut milk to the pan. Bring to a boil, then reduce the heat, cover and simmer gently over low heat for 15-20 minutes, adding the broccoli after 10 minutes, until the chicken is cooked through.

•Remove from the heat, season well with salt and pepper and serve immediately, you can pair with brown rice (optional). Enjoy!

  1. Curry is one of my favorite dishes. Do you have any recipe’s that doesn’t contain coconut milk(I am allergic to coconut). thanks
