Level of difficulty: Easy
2 Tbs. medium curry paste
3 lb prepared mixed vegetables (such as Zucchini, pepper,mushrooms, green beans and potato- no more than 1lb. Potato)
1 (7oz) can diced tomatoes
1 (13 oz.) low-fat coconut milk
2 Tbs. chopped cilantro leaves
1 Tbs. olive oil
1 chopped onion
1 crushed garlic clove
•Heat the oil in a large saucepan add the onion and garlic and sauté for 2 minutes. Stir in the curry paste and continue cooking for 1 minute more.
•Add the vegetables and cook for 2-3 minutes, stirring occasionally, then add the canned tomatoes and coconut milk. Stir well bring to a boil, then lower the heat and simmer for 12-15 minutes until all the vegetables are cooked.
•stir in the cilantro and serve.
